Initiated end of January/February after drying and maturation in stacked airy crates, then treated in conformity to the traditional “in rosso” system for around 20-25 days with skins, with daily re-mounting.
15 months in tonneaux of allier hectolitre barrels.
Vibrant and full, ruby red consistent colour. Intense and persistent aromas, fruity with notes of jam, chocolate, plum and dried fruit. Sweet, warm and soft tasting, fresh, velvety tannins.
Excellent with shortbread biscuits, cakes and sponges and also for mature strong cheeses or as a meditative wine.
